The Asian Palm civet, also called as the Asian Luwak by the natives of Sumatra, lives in the wild terrain of Sumatra particularly in the trees. History tells us that when the Dutch colonized the place and built coffee plantations from their farms, they were not allowed to get coffees from the produce. Later, in their farming activity when they discovered that these Asian civets eat the ripe coffee cherries of a tree and their wastes contain the beans they ate - hence, the discovery of the Kopi Luwak.



Kopi Luwak, pronounced as 'kopi' 'lu a', is manufactured in Sumatra, Bali, Java, and Sulawesi. Philippines also gather and produce the same but call it as kape motit in Cordillera area, kape alamid in some Tagalog areas, and kape melo or kape musang in Mindanao East Timor is also producing Kopi Luwak which they call as kafe-laku while Vietnamese name it as ca phe chon with a loose English translation weasel coffee.
Asian Palm civet, also called locally as Luwak, refers to a toddy cat is a minority member of the Viverridae family which are native of South and Southeast Asia. These small creatures thrive in the trees and their diet consists of the red and ripe coffee cherries, beans, insects, eggs, and fruits in season.
To produce this expensive and special coffee from the wastes of civets, it involves two methods: the human and the animal processes. First, the coffee cherries are planted or placed in the civets' habitat. As the Luwak eats the fleshy pulps from the coffee cherries, it passes through their digestive tract. While these cherries are in the stomach of the Luwak, it goes through the normal digestive process including chemical actions and fermentations and "exits" as wastes or feces. That's the animal process.
The human process starts when the local farmers begin to collect the wastes of the feces from the luwaks. The coffee cherries in the form of wastes are still in the same shape. Once the farmers finished collecting these coffee cherries, they are cleaned by washing them thoroughly and sun-dry the cherries. Roasting them is the last process but it is in this process where the special flavor is produced. The roasting is strictly from cinnamon to medium color only. This results to a rich and a strong flavor of caramel or chocolate. It is characterized by syrupy and smooth coffee and less bitter.
Thus, the Kopi Luwak Sumatra is produced. There are some Sumatra civet coffee farms manufacture wild civet coffees and there are some that produce it by restraining the civets within the defined demarcations.
Civet coffee is known for its unique aroma, smooth and chocolatey flavor, and low acidity which are usually sweet.
Scientific studies and analysis show that Kopi Luwak is not harmful to human health because of the thorough process of cleaning and washing and the amount of pathogen organisms contained in the beans are insignificant. And for whatever the cleaning procedure have missed, the roasting and brewing procedure will make up for.
